A vibrant, velvet-crumbed vanilla cake designed for fans and flavor-seekers alike. This multi-layered masterpiece combines the richness of butter with the moisture of oil, topped with a silky purple buttercream that is as bold as a stadium anthem.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 3/4 cups granulated sugar
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 4 large eggs, room temperature
  • 1 cup whole milk
  • 4 cups powdered sugar
  • 1/2 cup heavy cream
  • Purple food coloring
  • Assorted sprinkles


Instructions

  1. Preheat oven to 350°F (176°C) and grease three 8-inch cake pans, lining the bottoms with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. Cream the butter, sugar, oil, and vanilla in a large mixer bowl on medium-high for 2-3 minutes until light and fluffy.
  4. Add eggs one at a time, mixing well and scraping the sides after each addition.
  5. Alternately add the dry ingredients and milk to the batter, starting and ending with the dry ingredients, mixing until just combined.
  6. Divide the batter evenly among the prepared pans and bake for 22-25 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans briefly, then transfer to wire racks to cool completely.
  8. Whip the butter until smooth, then gradually add powdered sugar, vanilla, salt, and heavy cream until a spreadable consistency is reached.
  9. Add purple food coloring to the buttercream and mix until the desired shade is achieved.
  10. Level the cooled cake layers, stack with frosting between each, and cover the exterior with the remaining buttercream and sprinkles.

Notes

To ensure the best texture, make sure your eggs and dairy are truly at room temperature before starting, as this creates a stable emulsion in the batter. If you find your buttercream is too soft, chill it for 10-15 minutes before the final frosting stage to help it hold its shape during assembly.
