Transform a classic chocolate dessert into a candy-covered masterpiece designed for ultimate celebration. This moist, dark cocoa cake features a rich ganache base that serves as a playground for a vibrant explosion of Kit Kats, M&Ms, and lollipops.
Ingredients
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 cup boiling water
- 2 cups chocolate ganache frosting
- Assorted candies (Kit Kats, M&Ms, Rolos, and lollipops)
Instructions
- In a large mixing bowl, whisk together the eggs, oil, whole milk, and vanilla extract until the mixture is completely smooth and unified.
- In a separate bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, and baking soda, whisking vigorously to remove any cocoa clumps.
- Add the dry ingredients to the wet mixture and stir until just combined, taking care not to overmix the batter.
- Pour the boiling water directly into the batter and stir gently until the mixture becomes thin, glossy, and the cocoa has fully bloomed.
- Divide the batter between two greased and floured 9-inch round cake pans and bake at 350°F for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
- Let the cakes cool completely before stacking the layers with a thick coating of chocolate ganache between and over the entire exterior.
- Press Kit Kats, M&Ms, and Rolos into the sides and top of the frosted cake, then insert lollipops at varying heights to complete the festive look.
Notes
For the most stable decorating surface, ensure your cake layers are completely cold before applying the ganache. If the frosting feels too loose to hold the heavier candies like Kit Kats, place the frosted cake in the refrigerator for 10-15 minutes to set slightly before finishing the candy application.
