Description

This sculpted car cake combines a dense, structural chocolate base with professional ganache techniques to create a stunning edible masterpiece. Perfect for birthdays and celebrations, it offers a sophisticated flavor profile hidden beneath a beautifully detailed fondant exterior.


Ingredients

  • 500g All-Purpose Flour
  • 1½ cups Unsalted Butter, room temperature
  • 5 large eggs, room temperature
  • 2 cups granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 510g Bittersweet chocolate (at least 60% cocoa)
  • 1½ cups heavy cream (at least 38% fat)
  • 700g Marshmallow fondant
  • Silver luster dust


Instructions

  1. Preheat oven to 350°F (177°C) and grease a 15×17-inch sheet pan lined with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a stand mixer, cream butter and sugar until pale; add eggs one at a time until fully incorporated.
  4. Alternately add dry ingredients and milk in three batches, finishing with vanilla extract.
  5. Pour batter into the pan and bake for 50-55 minutes; let cool completely, then refrigerate overnight.
  6. Make the ganache by melting chocolate and heavy cream together until glossy, then let it set to a spreadable consistency.
  7. Stack cake layers with frosting, then carve the chassis using a template and a serrated knife.
  8. Apply a thin crumb coat of ganache, chill for 15 minutes, then apply a thicker second layer to smooth the surface.
  9. Roll out fondant to 3-4mm thickness, drape over the cake, and smooth into the curves.
  10. Add windows, wheels, and metallic-painted details using additional fondant and luster dust.

For the most precise carving, ensure the cake is thoroughly chilled or even slightly frozen to prevent the crumb from tearing. Use a flexible plastic smoother when applying the ganache layers to navigate the car’s unique curves for a professional finish. If your fondant becomes too soft during application, briefly cool your hands in cold water to maintain the material’s elasticity.
