Instructions
- Whisk the flour, caster sugar, baking powder, bicarb, and dark cocoa in a large bowl.
- Add the eggs, strong coffee, olive oil, and milk to the dry ingredients, stirring until the batter is smooth and looks like liquid velvet.
- Pour the batter into a greased pan and bake at 175°C (350°F) for 30–35 minutes until a toothpick comes out mostly clean.
- Let the cake cool completely on a wire rack before frosting.
- Whip room-temperature cream cheese until smooth, then slowly add the sweetened condensed milk, heavy cream, and vanilla until the mixture is fluffy and spreadable.
- Create the ganache by pouring hot heavy cream over chopped dark chocolate, letting it sit for a minute, and stirring until glossy.
- Mix your chosen cereal with melted dark chocolate and cocoa powder, spreading it on parchment paper to set as the “fur.”
- Layer the cake with frosting, pour the ganache over the top, and crown with the cereal fur before chilling in the fridge for two hours to set.
Notes
Ensure your cake is completely cooled before applying the cream cheese frosting to prevent it from melting. For a sharper finish, chill the cake for at least an hour after frosting but before pouring the ganache to help the layers stay distinct and professional.
