Ingredients

  • 1 large egg, room temperature
  • 1/4 cup honey
  • 1/4 cup natural peanut butter (xylitol-free)
  • 1/4 cup cooking oil (grapeseed or vegetable oil)
  • 1 teaspoon vanilla extract
  • 1 cup finely shredded carrots
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 6-cup ring mold or small fluted tube pan with oil.
  2. In a large glass bowl, whisk together the egg, honey, peanut butter, oil, and vanilla extract until the mixture is smooth, glossy, and fully emulsified.
  3. Using a silicone spatula, gently fold in the finely shredded carrots using a circular motion to ensure even distribution.
  4. Sift the whole wheat flour and baking soda directly over the wet mixture, then fold in gently until no streaks of flour remain, taking care not to overwork the batter.
  5. Spoon the batter into the prepared pan and bake for approximately 40 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Allow the cake to rest in the pan for 10 minutes to set its structure, then invert onto a wire rack to cool completely before serving.

Notes

Always verify that your peanut butter is free from xylitol, which is a sweetener toxic to dogs. If your dog has a sensitive stomach, you can substitute the whole wheat flour with oat flour for a gentler alternative that maintains a similar texture.
