Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease and line your cake pans with parchment paper.
- In a large bowl, sift together the flour, caster sugar, baking powder, and fine salt, then whisk gently to distribute.
- In a separate jug, whisk together the milk, vegetable oil, eggs, Greek yogurt, vanilla extract, rose water essence, and pink food gel until the color is uniform.
- Create a well in the center of the dry ingredients and pour in the wet mixture along with the softened butter, then beat on low speed until just combined.
- Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes, or until a skewer inserted into the center comes out clean.
- Allow cakes to cool in the pans for ten minutes before transferring them to a wire rack to cool completely.
- Prepare the Swiss meringue buttercream, adding rose water for flavor, and divide it into bowls to tint with the various food gels.
- Stack the cooled cakes with a thin layer of frosting in between, then use piping bags with petal tips to create colorful flowers and green leaves across the top and sides.

For the best results, ensure your eggs and dairy are at room temperature to create a perfectly emulsified batter that won’t curdle. When piping your floral decorations, if the buttercream becomes too warm from your hands, place the piping bag in the refrigerator for a few minutes to restore its firm, workable consistency.
