Description

A sophisticated yet comforting dessert, this Green Tea Cake combines the earthy depth of premium matcha with a velvety cream cheese frosting. Its tender crumb, made moist with yogurt and oil, offers a perfect balance of sweetness and subtle grassy notes.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 teaspoons green tea powder (matcha), divided
  • 1 1/2 cups white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract, divided
  • 1 cup plain yogurt
  • 2 cups confectioners’ sugar
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 2 tablespoons milk


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans with butter and a light dusting of flour.
  2. In a medium bowl, sift together the all-purpose flour, cake flour, baking soda, salt, and 4 teaspoons of green tea powder.
  3. In a large mixing bowl, beat the white sugar, vegetable oil, and eggs until the mixture is smooth and pale in color, then stir in 1 1/2 teaspoons of vanilla extract.
  4. Incorporate the flour mixture and the yogurt into the wet ingredients by alternating between them, starting and ending with the flour; mix just until combined.
  5. Distribute the batter evenly between the two prepared pans and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in their pans for 30 minutes before transferring them to a wire rack to cool completely.
  7. Prepare the frosting by sifting the confectioners’ sugar with the remaining 2 teaspoons of green tea powder.
  8. Beat the softened butter, cream cheese, 1/2 teaspoon vanilla, and milk until smooth, then gradually add the sugar mixture until creamy.
  9. Once the cake layers are entirely cool, frost the top of one layer, stack the second, and cover the exterior before serving.

Notes

To achieve the most vibrant green hue, use ceremonial grade matcha which typically retains its color better during the baking process than culinary grade. If you find the frosting too soft, refrigerate it for 15 minutes before spreading to help it hold its shape on the layers.
