Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 13×9 inch baking pan with non-stick spray.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium-sized bowl to distribute leavening agents.
  3. In a separate vessel, whisk the sour cream, vegetable oil, lime zest, lime juice, milk, and extracts until combined.
  4. In a primary mixing bowl, cream the butter and sugar on high speed for two minutes until light and fluffy.
  5. Add the eggs one at a time, mixing on medium speed for 20 seconds after each addition to create a stable emulsion.
  6. Alternately add the dry ingredients in three parts and the liquid mixture in two parts, starting and ending with the dry ingredients.
  7. Scrape the bowl and perform a final 10-second mix or fold by hand until just combined.
  8. Pour the batter into the pan and bake for 35-40 minutes, or until a toothpick emerges with a few moist crumbs.
  9. Prepare the frosting by beating cream cheese and butter until smooth, then incorporating lime extract, salt, and confectioner’s sugar.
  10. Allow the cake to cool completely before spreading the frosting in an even layer and garnishing with extra zest.

Notes

To ensure a perfectly smooth frosting, make sure your cream cheese is slightly cool but pliable when you begin mixing. If you prefer a more intense lime flavor, you can brush the warm cake with a simple lime syrup made from lime juice and sugar before cooling and frosting.
