Instructions

  1. Preheat your oven to 350°F (180°C) and grease two 8-inch cake tins, lining the bottoms with parchment paper for easy removal.
  2. In a medium bowl, sift together the flour, cornstarch, baking powder, and salt, then whisk gently to aerate the mixture and remove lumps.
  3. In a large bowl, beat the softened butter, vegetable oil, sugar, and lemon zest on medium speed for 2 minutes until the mixture is light, creamy, and pale yellow.
