Description

Bring the magic of the islands to your next celebration with this stunning Moana-inspired cake featuring waves of blue buttercream and a sandy biscuit beach. Layers of moist buttermilk cake and sweet strawberry jam create a delicious foundation for this whimsical tropical adventure.


Ingredients

  • 3 layers of buttermilk cake
  • Strawberry jam
  • 3 to 4 batches of buttercream icing
  • Blue gel food coloring
  • Crushed granita biscuits
  • Chocolate fingers
  • Plastic toppers and clean shells
  • Decorative lei


Instructions

  1. Secure the first cake layer to a board or tray using five small blobs of buttercream as glue.
  2. Spread a layer of strawberry jam over the cake leaving a 1cm border, pipe on buttercream, and place the second cake layer on top before repeating.
  3. Add the final cake layer and apply a thin crumb coat of buttercream to the entire cake, then chill in the fridge for 30 minutes to set.
  4. Tint two-thirds of the remaining buttercream blue and swirl it onto the top and sides to create waves, leaving one section white for the beach.
  5. Cover the white icing with crushed biscuits to create sand, then add chocolate fingers, toppers, and shells to complete the scene.

Notes

Ensure your cake layers are completely cool before you begin decorating to prevent the buttercream from melting. For the most realistic ocean look, use the back of a spoon to create peaks in the blue icing to mimic crashing surf.
