Description

This classic Southern dessert features a dense, buttery crust topped with a rich and velvety cream cheese layer. Perfect for potlucks or afternoon tea, it delivers a nostalgic texture that has been a family favorite for generations.


Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 cup granulated sugar
  • 3 large eggs, divided
  • 0.75 cups salted butter, melted and divided
  • 2 tablespoons milk
  • 2 teaspoons vanilla extract, divided
  • 8 ounces cream cheese, softened
  • 4 cups powdered sugar, plus extra for dusting


Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray.
  2. In a large bowl, whisk together the all-purpose flour and baking powder until well combined.
  3. Stir in the granulated sugar, one egg, 1/2 cup of melted butter, milk, and 1 teaspoon of vanilla extract until a stiff dough forms, then press it firmly into the bottom of the prepared pan.
  4. In a separate bowl, beat the softened cream cheese until smooth, then mix in the remaining two eggs and 1 teaspoon of vanilla.
  5. Gradually beat in the powdered sugar followed by the remaining 1/4 cup of melted butter until the topping is glossy and smooth.
  6. Pour the mixture over the base, bake for 40 to 45 minutes until the edges are golden and the center still has a slight jiggle.
  7. Cool completely on a wire rack before dusting with extra powdered sugar and slicing into squares.

Notes

For the best results, ensure your eggs and cream cheese are completely at room temperature before you begin mixing the topping to avoid lumps. While it is tempting to eat early, letting the cake cool completely is essential for the gooey center to set into the perfect consistency.
