- 120g (approx. 1/2 cup) butter, softened to room temperature
- 170g (approx. 3/4 cup) Chelsea White Sugar
- 2 large eggs, room temperature
- 240g (approx. 2 cups) all-purpose flour
- 2 teaspoons baking powder
- 3/4 cup whole milk
Instructions
- Preheat your oven to 350°F (180°C). Grease an 8-inch round cake tin and line the bottom with parchment paper.
- In a large mixing bowl, cream together the softened butter and sugar until the mixture is pale and fluffy.
- Add the eggs one at a time, beating well after each addition to create a smooth emulsion.
- Sift the flour and baking powder together in a separate bowl.
- Alternately fold the flour mixture and the milk into the butter base, starting and ending with the flour, until just combined.
- Pour the batter into the prepared tin and bake for 30 to 35 minutes, or until a skewer inserted into the center comes out clean.
- Cool the cake in the tin for 5 minutes before transferring it to a wire rack.
