Description

Ingredients

  • 120g (approx. 1/2 cup) butter, softened to room temperature
  • 170g (approx. 3/4 cup) Chelsea White Sugar
  • 2 large eggs, room temperature
  • 240g (approx. 2 cups) all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup whole milk


Instructions

  1. Preheat your oven to 350°F (180°C). Grease an 8-inch round cake tin and line the bottom with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until the mixture is pale and fluffy.
  3. Add the eggs one at a time, beating well after each addition to create a smooth emulsion.
  4. Sift the flour and baking powder together in a separate bowl.
  5. Alternately fold the flour mixture and the milk into the butter base, starting and ending with the flour, until just combined.
  6. Pour the batter into the prepared tin and bake for 30 to 35 minutes, or until a skewer inserted into the center comes out clean.
  7. Cool the cake in the tin for 5 minutes before transferring it to a wire rack.

Notes

To ensure a perfectly tender crumb, avoid overmixing the batter once the flour is added. If your kitchen is cold, you can quickly warm your eggs by placing them in a bowl of warm water for five minutes before starting the recipe.
