Description

This heirloom-style vegan chocolate cake is incredibly moist and tender, relying on the simple pantry-stable chemistry of vinegar and baking soda. It is a deeply cocoa-rich dessert that stays soft for days, making it the perfect reliable treat for any celebration or quiet afternoon.


Ingredients

  • 1 1/2 cups soy milk
  • 2 teaspoons apple cider vinegar
  • 3 cups all-purpose flour
  • 2 cups granulated sugar

  • 1 1/2 teaspoons baking soda
  • 1 teaspoon sea salt
  • 2/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1 cup boiling water mixed with 1 teaspoon instant coffee
  • 1/2 cup vegan butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 pinch sea salt
  • 2-3 tablespoons vegan milk


Instructions

  1. Preheat your oven to 350°F (180°C) and prepare two 9-inch cake pans by greasing, flouring, and lining the bottoms with parchment paper circles.
  2. In a small bowl, whisk together the soy milk and apple cider vinegar; let the mixture sit for about 5 minutes until it curdles into a vegan buttermilk.
  3. In a large mixing bowl, sift together the flour, sugar, 1 cup of cocoa powder, baking powder, baking soda, and sea salt to ensure there are no lumps.
  4. Add the curdled milk mixture, oil, and vanilla extract to the dry ingredients, then pour in the boiling water and instant coffee mixture.
  5. Use an electric whisk on medium speed for approximately 2 minutes until the batter is smooth, though it will be quite thin.
  6. Divide the batter evenly between the two prepared pans and bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes rest in their pans for 30 minutes on a wire rack before carefully removing them to cool completely.
  8. Prepare the frosting by beating together the softened vegan butter, 1/2 cup cocoa, powdered sugar, vanilla, salt, and vegan milk until thick and creamy, then frost the cooled layers.
