Description
A simple, comforting apple cake featuring diced orchard fruit folded into a thick, creamed butter batter. Finished with a crisp, sugary crust and subtle notes of dark rum, this easy bake comes together with everyday pantry staples.
Ingredients
- All-Purpose Flour
- Baking Powder
- Table Salt
- Unsalted Butter
- Granulated Sugar
- Large Eggs
- Vanilla Extract
- Dark Rum
- Baking Apples
- Confectioners’ Sugar
Instructions
- Prep the pan and oven. Position an oven rack in the center of your oven and preheat the heat to 350°F (175°C fan). Grease a 9-inch springform pan or a 9-inch round metal cake pan thoroughly with butter or nonstick baking spray.
- Whisk the dry base. Measure your all-purpose flour, baking powder, and salt into a small mixing bowl. Whisk the dry ingredients together for twenty seconds until the leavening distributes evenly through the flour.
- Cream butter and sugar. Place your softened unsalted butter and granulated sugar into a large mixing bowl. Beat the mixture with a handheld electric mixer or stand mixer paddle on medium speed for three minutes until the texture turns pale, light, and fluffy.
- Fold in batter. Add the room temperature eggs to the butter mixture one at a time, beating thoroughly after each addition. Pour in the vanilla extract and dark rum, mix until combined, then fold in the flour mixture and diced fruit cubes until coated.
- Bake your apple cake. Scrape the dense batter into your prepared baking pan, level the surface, and sprinkle the remaining tablespoon of granulated sugar across the top. Bake for about 40 minutes at 350°F until golden brown and a toothpick comes out clean.
- Cool and unmold. Set the hot pan on a wire cooling rack for twenty minutes, loosen the edges with a knife, and remove the pan ring or invert onto a serving plate.
Notes
- Ensure your butter and eggs are at room temperature to achieve a smooth, well-emulsified batter.
- Cut your baking apples into consistent half-inch pieces to prevent them from sinking to the bottom of the pan.
- Tent a sheet of aluminum foil loosely over the cake during the final 12 minutes of baking if the top browns too quickly.
- Serve the cake slightly warm with a scoop of vanilla bean ice cream or a dust of confectioners’ sugar.
