Ingredients

  • 2 cups finely shredded red baking apples
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder

  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger

  • 1 1/2 cups light brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 cup water
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter
  • 1/2 cup room-temperature unsalted butter
  • 3 cups powdered sugar
  • 8 ounces cold cream cheese


Instructions

  1. Prepare the oven. Preheat your oven to 180°C (350°F) conventional and lightly grease two eight-inch by three-inch cake tins.
  2. Whisk dry ingredients. Sift together the flour, cornstarch, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg in a large bowl.
  3. Grate the apples. Finely grate two medium-sized red baking apples to yield exactly 300 grams, keeping the natural juices.
  4. Mix wet elements. Combine the brown sugar, eggs, vegetable oil, milk, vanilla, and grated apples in a separate bowl until uniform.
  5. Fold the batter. Gently combine the dry ingredients into the wet mixture using a spatula until just incorporated, avoiding overmixing.
  6. Bake the sponges. Distribute the batter into prepared tins and bake for 30 to 33 minutes or until a skewer inserted in the center emerges clean.
  7. Simmer the filling. Cook shredded apple, sugar, water, cornstarch, cinnamon, lemon juice, and butter in a saucepan until thickened into a glossy compote.
  8. Whip the buttercream. Beat butter until fluffy, gradually add powdered sugar, and finish by folding in cold cream cheese, vanilla, lemon juice, and cinnamon.
  9. Assemble the cake. Level the cooled cake layers, spread buttercream between them, create a dam to hold the compote filling, and frost the exterior.
