Description

This decadent chewy cookie cake features a buttery, golden-edged center loaded with semi-sweet chocolate chips. It is the perfect nostalgic treat that balances a soft, tender crumb with a beautiful buttercream border.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9-inch round cake pan with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, and salt, then gradually mix into the wet ingredients until just combined.
  5. Fold in the chocolate chips, reserving a few to place on top.
  6. Press the dough into the prepared pan and bake for 22 minutes until the edges are golden.
  7. Cool completely before preparing the frosting by beating butter, powdered sugar, vanilla, and milk until smooth.
  8. Pipe or spread the frosting around the cooled cake edges to finish.

Notes

Ensure your butter and eggs are at room temperature to achieve the best texture for your cookie cake. Be careful not to over-mix the dough once the dry ingredients are added to keep the cake tender, and always wait for the cake to cool fully before decorating so your buttercream remains stable.
