  • Sour cream

Instructions

  1. Prepare the oven. Heat your oven to 350 degrees and prepare three 8-inch cake pans with butter, flour, and parchment rounds.
  2. Whisk dry ingredients. Sift the flour, cocoa, baking soda, baking powder, salt, and espresso powder in a bowl until uniform.
  3. Emulsify wet ingredients. Beat the oil, sugars, and eggs until glossy, then incorporate sour cream and vanilla extract.
  4. Combine the batter. Fold in the shredded zucchini and stir in the dry ingredients, followed by the chocolate chips, taking care not to overmix.
