Description

This traditional coffee cake features a tender cream cheese-enriched crumb, a deep cinnamon-brown sugar swirl, and a generous buttery streusel topping. Perfect for slow weekend mornings, this heritage-style cake offers a nostalgic flavor that brings warmth to any kitchen table.

Ingredients

  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 1.5 cups granulated sugar
  • 0.5 cup light brown sugar, packed
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp cornstarch
  • 0.5 tsp table salt
  • 0.75 cup buttermilk
  • For the Swirl: 0.5 cup light brown sugar mixed with 1 tbsp ground cinnamon
  • For the Streusel: 0.5 cup unsalted butter (melted), 1 cup flour, 0.5 cup brown sugar, 0.5 cup granulated sugar, 1 tsp cinnamon, pinch of salt
  • For the Glaze: 1 cup powdered sugar, 2 tbsp milk

Instructions

  1. Prepare the oven. Preheat the oven to 350°F (177°C) and lightly grease and flour a 13×9-inch baking pan.
  2. Cream the fats. Beat the softened butter and cream cheese in a large bowl until smooth and silky.
  3. Add the sugars. Mix in the granulated and brown sugars until the batter is light and fluffy.
  4. Incorporate eggs. Add the eggs one at a time, followed by the vanilla extract, scraping down the bowl as needed.
  5. Whisk dry elements. In a separate bowl, whisk together the flour, baking powder, cornstarch, and salt; sift to remove any lumps.
  6. Combine ingredients. Add the flour mixture to the wet ingredients, alternating with the buttermilk, and stir until just incorporated.
  7. Layer the cake. Spread half the batter into the prepared pan, sprinkle with the cinnamon-sugar swirl mixture, and cover with the remaining batter.
  8. Prepare the streusel. Combine the flour, sugars, cinnamon, salt, and melted butter in a bowl, using a fork to create large, irregular clumps.
  9. Bake the cake. Sprinkle the streusel over the top and bake for 40 to 50 minutes until golden brown.
  10. Glaze and serve. Whisk the powdered sugar and milk into a smooth glaze and drizzle over the cooled cake before slicing.

Notes

  • Ensure all dairy ingredients reach room temperature to achieve a smooth, lump-free batter.
  • Use a light hand when measuring flour to prevent the cake from becoming dense or dry.
  • If the streusel mixture becomes a paste, chill it briefly in the refrigerator to restore its crumbly texture.
  • Check for doneness five minutes early with a toothpick to avoid over-baking the tender crumb.
