- 1½ tablespoons milk
Instructions
- Prep and preheat. Preheat oven to 160°C (320°F) and grease and line two 8-inch cake tins with parchment paper.
- Sift dry ingredients. Whisk together the flour, cornstarch, baking soda, baking powder, and salt in a bowl and set aside.
- Cream butter base. Beat the butter, oil, and granulated sugar with an electric mixer for two minutes until pale and creamy.
- Add eggs and aromatics. Incorporate eggs one at a time, then mix in the vanilla, vinegar, and half the buttermilk.
- Combine the batter. Fold in the dry ingredients and remaining buttermilk alternately by hand, then fold in 14 chopped cookies.
- Bake the layers. Divide batter into tins and bake for 33 minutes or until a toothpick comes out clean; cool on a wire rack.
- Prepare and frost. Whip the buttercream ingredients until fluffy, fold in 14 crushed cookies, and assemble the cooled cake layers.
