Description

This nostalgic Cookies and Cream Birthday Cake features soft, vanilla-kissed layers studded with crunchy chocolate sandwich cookies. It is finished with a silky-smooth buttercream that provides the perfect balance of richness and childhood charm.


Ingredients

  • 2⅓ cups (300 g) all-purpose flour
  • ¼ cup (25 g) cornstarch
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (105 g) vegetable oil
  • 1⅔ cups (332 g) granulated sugar
  • 3 large eggs, room temperature
  • 1¼ tablespoons vanilla extract
  • 1 teaspoon white vinegar
  • 1½ cups (112 g) buttermilk, divided
  • 28 chocolate sandwich cookies, divided
  • 1½ cups (340 g) unsalted butter, softened
  • 2¾ cups (350 g) icing sugar
  • 1½ teaspoons vanilla extract
  • 1½ tablespoons milk


Instructions

  1. Prep and preheat. Preheat oven to 160°C (320°F) and grease and line two 8-inch cake tins with parchment paper.
  2. Sift dry ingredients. Whisk together the flour, cornstarch, baking soda, baking powder, and salt in a bowl and set aside.
  3. Cream butter base. Beat the butter, oil, and granulated sugar with an electric mixer for two minutes until pale and creamy.
  4. Add eggs and aromatics. Incorporate eggs one at a time, then mix in the vanilla, vinegar, and half the buttermilk.
  5. Combine the batter. Fold in the dry ingredients and remaining buttermilk alternately by hand, then fold in 14 chopped cookies.
  6. Bake the layers. Divide batter into tins and bake for 33 minutes or until a toothpick comes out clean; cool on a wire rack.
  7. Prepare and frost. Whip the buttercream ingredients until fluffy, fold in 14 crushed cookies, and assemble the cooled cake layers.
