A stunning, no-bake patriotic dessert featuring a creamy cheesecake base on a buttery graham cracker crust, topped with cherry and blueberry fillings to resemble the American flag. This light and airy treat is the perfect centerpiece for summer holiday celebrations.
Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for crust)
- 24 oz full-fat brick cream cheese, softened
- 1/2 cup granulated sugar (for filling)
- 1/2 cup sour cream
- 1 tbsp lemon juice
- 2 cups heavy whipping cream, cold
- 1 tsp vanilla extract
- 1/2 cup powdered sugar
- 1 can (21 oz) cherry pie filling
- 1/2 can (10 oz) blueberry pie filling
- Edible white stars or small marshmallows
Instructions
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of a 13×9-inch baking pan and set aside.
- In a large bowl, beat the softened cream cheese, 1/2 cup granulated sugar, sour cream, and lemon juice with an electric mixer until perfectly smooth.
- In a separate chilled bowl, whip the heavy whipping cream, vanilla extract, and powdered sugar until stiff peaks form.
- Using a rubber spatula, gently fold the whipped cream into the cream cheese mixture in two batches until fully incorporated and no streaks remain.
- Spread the cheesecake filling evenly over the graham cracker crust and smooth the top with an offset spatula. Cover and refrigerate for at least 6 hours, or overnight.
- Once the cake is firm, use the blueberry filling to create a square in the upper left corner and the cherry filling to create horizontal stripes. Top the blueberry section with edible white stars before serving.
Notes
For the cleanest slices, always chill your cheesecake for the full duration before decorating. If you find the fruit filling spreading, you can lightly blot the top of the cheesecake with a paper towel before adding the toppings to remove any surface moisture. Store leftovers covered in the refrigerator for up to three days.
