Description
This heirloom Lemon Cheesecake captures the essence of spring with its rich, velvety texture and bright citrus notes. Using a traditional water bath and fresh zest, this recipe delivers a professional, crack-free finish that is as beautiful as it is delicious.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1 1/4 cups granulated sugar, divided
- 6 tablespoons unsalted butter, melted
- 32 ounces full-fat cream cheese, room temperature
- 2 tablespoons fresh lemon zest
- 1/4 cup fresh lemon juice
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs, room temperature
- 1/2 cup lemon curd
Instructions
- Adjust oven rack to the lower-middle position and preheat to 350°F (177°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press firmly into a 9-inch springform pan and bake for 10 minutes.
- Wrap the bottom of the hot pan in heavy-duty aluminum foil to protect it from the water bath.
- Pulse the remaining sugar and lemon zest in a blender or food processor until the zest is finely incorporated.
- In a large bowl, beat softened cream cheese and lemon sugar on medium-high speed for 2 minutes until creamy.
- Add lemon juice, sour cream, and vanilla, beating until uniform.
- Add eggs one at a time, mixing on medium speed just until the yellow disappears.
- Pour batter over the warm crust and place the springform pan inside a large roasting pan.
- Carefully pour boiling water into the roasting pan until it reaches one inch up the sides of the cheesecake pan.
- Bake for 55 to 70 minutes, then turn off the oven and let it rest inside with the door cracked for one hour.
- Cool completely on the counter, spread lemon curd over the top, and refrigerate for at least 4 hours or overnight.
Notes
To ensure a perfectly smooth filling, always use room temperature ingredients to prevent lumps. When slicing, dip a sharp knife in hot water and wipe it clean between each cut for professional, clean edges. Always use fresh lemons rather than bottled juice for the most vibrant, floral citrus flavor.
