Description

This elegant Mango Birthday Layer Cake features soft vanilla sour cream sponge layered with a vibrant, homemade mango curd. It is finished with a silky white chocolate Swiss meringue buttercream and a bright lime soaking syrup for a sophisticated, summery dessert.


Ingredients

  • 2 cups mango puree
  • 1/2 cup fresh lemon juice
  • 1 cup granulated sugar
  • 3 whole eggs
  • 4 egg yolks
  • 1/2 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla paste
  • 1/2 cup water
  • 1/2 cup lime juice
  • 1 cup granulated sugar (for syrup)
  • 4 egg whites (for buttercream)
  • 1 1/2 cups granulated sugar (for buttercream)
  • 2 cups unsalted butter, softened (for buttercream)
  • 1/2 cup white chocolate, melted


Instructions

  1. Cook mango curd. Whisk mango puree, lemon juice, sugar, eggs, and yolks in a saucepan over medium heat until thickened; stir in butter, strain, and chill.
  2. Prepare cake pan. Preheat oven to 325°F, grease a 9-inch pan, line with parchment paper, and dust sides with flour.
  3. Mix wet ingredients. Whip eggs and sugar until pale and thick; whisk sour cream, oil, and vanilla paste in a separate bowl then gently combine.
  4. Fold dry ingredients. Sift flour, baking powder, and salt, then fold into the wet mixture in three additions without overmixing.
  5. Bake the cake. Pour into the prepared pan and bake for 75 to 80 minutes until a toothpick comes out clean; cool completely.
  6. Prepare lime syrup. Boil water, lime juice, and sugar in a saucepan until dissolved, then remove from heat to cool.
  7. Whip buttercream. Combine sugar, egg whites, and water over simmering water until 140°F, then beat to stiff peaks and incorporate butter and melted white chocolate.
  8. Assemble the cake. Slice cake into four layers, brushing each with lime syrup, then pipe buttercream dams and fill with mango curd.
  9. Decorate the cake. Apply a thin crumb coat, chill, frost with remaining buttercream, pipe star dollops, and top with fresh mango cubes.

  • Ensure all dairy and eggs are at room temperature to prevent the batter from curdling during the mixing process.
  • If your buttercream appears soupy or split, keep whipping on high speed or apply gentle heat to the bowl to emulsify the butter.
