Description

This Mango Yogurt Cake offers a tender, moist crumb infused with tropical fruit and a bright citrus whisper. It is a simple, comforting loaf perfect for quiet afternoons and pairs beautifully with a warm cup of tea.


Ingredients

  • 180g unsalted butter, softened
  • 180g caster sugar
  • 1 tablespoon freshly grated lemon rind
  • 3 large eggs, at room temperature
  • 1 tablespoon lemon juice
  • 250g self-raising flour
  • 200g mango yogurt
  • For the glaze: 100g icing sugar, 20g softened butter, 1 tablespoon lemon juice, 1 tablespoon warm water


Instructions

  1. Prepare the oven. Preheat your oven to 180ºC (350ºF) and line a 20cm round baking tin with butter and parchment paper.
  2. Cream butter and sugar. Beat the softened butter, caster sugar, and lemon rind together in a bowl until the mixture is pale, light, and fluffy.
  3. Add the eggs. Incorporate the room-temperature eggs one by one, beating thoroughly after each addition to ensure a stable batter.
  4. Add lemon juice. Stir the lemon juice into the mixture until combined, accepting any slight curdling as a natural part of the process.
  5. Fold in dry ingredients. Alternately fold in the sifted self-raising flour and the mango yogurt in two batches to maintain a light, airy structure.
  6. Bake the cake. Spread the batter into the prepared tin and bake on the center rack for 35 minutes or until a skewer comes out clean.
  7. Cool and glaze. Allow the cake to cool in the tin for 15 minutes before inverting onto a wire rack to cool completely and applying the whisked glaze.
