Description

This elegant Marvel Cake features a sophisticated marble swirl of deep cocoa and aromatic vanilla. Using premium olive oil instead of butter, it achieves a silken, moisture-rich crumb that remains perfectly tender for several days.


Ingredients

  • 3/4 cup premium cocoa powder, sifted
  • 2 1/2 cups granulated sugar, divided
  • 1/3 cup hot water
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla powder (or vanilla extract)
  • 5 large eggs, room temperature
  • 1 cup extra virgin olive oil
  • 1 cup whole milk
  • Butter or neutral oil for greasing the pan


Instructions

  1. In a medium-sized bowl, whisk together the sifted cocoa powder, 1/2 cup of sugar, and hot water until a glossy, smooth paste forms; set aside to cool.
  2. In a separate bowl, sift together the all-purpose flour, baking powder, salt, and vanilla powder.
  3. In a stand mixer, beat the remaining 2 cups of sugar and the 5 eggs on medium-high speed until the mixture reaches the thick, pale ribbon stage.
  4. Reduce the mixer speed to low and slowly pour in the olive oil in a steady stream to maintain the emulsion.
  5. Alternately add the flour mixture and the milk in two batches, mixing until just combined and scraping the sides of the bowl to ensure no dry pockets remain.
  6. Transfer 3 cups of the vanilla batter into the cocoa paste bowl and whisk until the color is uniform.
  7. Pour a layer of vanilla batter into a greased bundt pan, followed by dollops of cocoa batter, then repeat the layers.
  8. Gently draw a knife through the batters in a zig-zag motion to create the marble effect, then bake at 350°F (175°C) for 50 to 60 minutes.
  9. Cool the cake in the pan for 10 to 12 minutes before inverting it onto a wire rack to cool completely.

Notes

For the most distinct marble pattern, avoid over-swirling the batters; two or three gentle passes with a knife are all that is needed. Ensure your eggs are truly at room temperature before beginning to help them reach the maximum volume during the ribbon stage, which provides the cake’s primary structure.
