Description

Ingredients

  • 2 cups shredded zucchini
  • 2 cups all-purpose flour

  • 1 tsp vanilla extract
  • 1 tsp baking powder

  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter (for frosting)
  • 4 oz cream cheese (for frosting)
  • 2 cups confectioners’ sugar


Instructions

  1. Prep the environment. Preheat your oven to 350°F and grease a 9×13-inch baking pan thoroughly.
  2. Combine dry ingredients. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl until uniform.
  3. Emulsify wet ingredients. In a separate bowl, whisk together the vegetable oil, both sugars, applesauce, eggs, and vanilla until smooth and glossy.
