This spiced Zucchini Cake features a tender, moist crumb enriched with applesauce and a sophisticated, nutty brown butter frosting. It is a perfect way to transform garden-fresh zucchini into a decadent, small-batch dessert.
Ingredients
- 2 cups shredded zucchini
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup unsalted butter (for frosting)
- 4 oz cream cheese (for frosting)
- 2 cups confectioners’ sugar
Instructions
- Prep the environment. Preheat your oven to 350°F and grease a 9×13-inch baking pan thoroughly.
- Combine dry ingredients. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl until uniform.
- Emulsify wet ingredients. In a separate bowl, whisk together the vegetable oil, both sugars, applesauce, eggs, and vanilla until smooth and glossy.
- Mix the batter. Pour the wet mixture into the dry ingredients, stir until just combined, and gently fold in the shredded zucchini.
- Bake the cake. Spread the batter into the pan and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely. Allow the cake to cool fully on a wire rack before attempting to apply any frosting.
- Brown the butter. Melt the butter in a skillet over medium heat, stirring until it turns golden brown and smells nutty, then remove from heat to cool.
- Whip the frosting. Beat the browned butter with cream cheese, then gradually add confectioners’ sugar and vanilla, whipping until light and fluffy.
Notes
- Use the coarse side of a box grater for the best zucchini texture.
- Weigh your flour with a kitchen scale to ensure the most tender crumb.
- Wait for the cake to cool entirely to prevent the frosting from melting.
- Store the finished cake in the refrigerator to keep the cream cheese base food-safe.
