Ingredients

  • 1.5 cups graham cracker crumbs
  • 1/3 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces full-fat cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup granulated sugar (for filling)
  • 1 tablespoon fresh lemon juice
  • 1.5 cups heavy whipping cream, cold
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 21 ounces cherry pie filling
  • 1 cup blueberry pie filling
  • White edible star sprinkles


Instructions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until the texture resembles wet sand, then press firmly into an even layer in a 13×9-inch pan.
  2. In a large mixing bowl, beat the softened cream cheese, sour cream, lemon juice, and granulated sugar with an electric mixer until the mixture is completely smooth and silky.
  3. In a separate chilled metal bowl, whip the heavy cream, vanilla extract, and powdered sugar on high speed until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture using a silicone spatula, being careful not to deflate the air, then spread the batter evenly over the prepared crust.
  5. Cover the pan tightly and refrigerate for at least 4 to 6 hours, or ideally overnight, until the filling is firm and set.
  6. Trace a flag design on the surface with a toothpick, then fill the top-left corner with blueberry filling and create horizontal stripes with the cherry filling before finishing with star sprinkles.

Notes

For the cleanest slices, dip your knife in hot water and wipe it dry between every cut. If you find the fruit filling is too runny, try chilling the cans in the refrigerator for a few hours before decorating to help the gel hold its shape on top of the cream.
