Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/4 cup unsalted butter, softened (for frosting)
- 1/2 cup creamy peanut butter (for frosting)
- 2 cups powdered sugar
- 3 tablespoons milk
- 1/2 teaspoon vanilla extract (for frosting)
Instructions
- Preheat oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until uniform.
- In a large bowl or stand mixer, cream together the softened butter, peanut butter, and both sugars for 3 to 5 minutes until light and fluffy.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Gradually add the flour mixture to the creamed mixture, alternating with the buttermilk, beginning and ending with the flour; mix until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan on a wire rack to prevent the frosting from melting.
- Prepare the frosting by creaming the butter and peanut butter, then gradually beating in the powdered sugar, milk, and vanilla until fluffy before spreading over the cooled cake.
Notes
For the most consistent results, ensure your buttermilk and eggs are at room temperature before mixing to prevent the batter from breaking. To achieve a perfectly clean slice, try wiping your knife with a warm, damp cloth between each cut through the thick peanut butter frosting.
