Description

This easy, nostalgic funnel cake recipe uses common pantry staples to recreate the classic, crispy-edged carnival treat at home. It is a quick and comforting dessert that brings the warmth and aroma of a golden, sugar-dusted fairground favorite straight to your kitchen.


Ingredients

  • 2 cups buttermilk pancake mix
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup warm water
  • Vegetable oil for frying
  • 1/4 cup confectioners’ sugar for dusting


Instructions

  1. Heat the oil. Pour vegetable oil into a heavy cast iron skillet to halfway up the sides and heat to 350°F (177°C).
  2. Combine dry ingredients. Whisk together the buttermilk pancake mix and granulated sugar in a large glass bowl until well combined.
  3. Mix the batter. Gradually add the vanilla extract and warm water to the dry mix, whisking until the batter is smooth and reaches a thick, ribbon-like consistency.
  4. Prepare the bag. Transfer the batter into a pastry bag fitted with a small round tip or a sturdy zip-top bag with the corner snipped off.
  5. Pipe the dough. Carefully squeeze the batter into the hot oil in an overlapping circular, interconnected pattern to form a disk.
  6. Fry until golden. Cook for about one minute until the underside is golden brown, then flip and fry for another thirty to sixty seconds until the other side is crisp.
  7. Drain and dust. Remove the pastry to a paper towel-lined plate and generously dust with confectioners’ sugar before serving warm.
