Description
These festive cheesecake bars combine a buttery graham cracker crust with a velvety, sour-cream-infused filling that is perfectly balanced for a summer treat. Decorated with fresh strawberries and blueberries in a vibrant flag design, they are as beautiful to display as they are delicious to eat.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for crust)
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar (for filling)
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1 cup fresh strawberries, sliced
- 1/2 cup fresh blueberries
Instructions
- Preheat your oven to 325°F (163°C) and line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar, then press the mixture firmly into the bottom of the prepared pan.
- Bake the crust for 10 minutes, then remove it from the oven and let it cool slightly on a wire rack.
- In a large mixing bowl, beat the softened cream cheese until perfectly smooth and creamy.
- Gradually add the granulated sugar and vanilla extract, continuing to mix until the sugar is dissolved and the mixture is glossy.
- Mix in the eggs one at a time on low speed, ensuring each is just incorporated before adding the next.
- Fold the sour cream into the batter by hand using a spatula until the mixture is uniform.
- Pour the filling over the pre-baked crust and bake for 30 to 35 minutes until the edges are puffed and the center still has a slight jiggle.
- Allow the cheesecake to cool to room temperature on a wire rack, then cover and refrigerate for at least 2 hours or overnight.
- Arrange strawberry slices and blueberries on top of the chilled cheesecake in a flag pattern before slicing into bars and serving.
Notes
For the smoothest filling, ensure your cream cheese and eggs are at room temperature before you begin mixing to prevent lumps. To get professional-looking clean edges, wipe your knife clean and dip it in warm water between every slice you make in the chilled bars.
