Description

Celebrate the summer holidays with this vibrant red, white, and blue poke cake. Featuring a moist crumb infused with creamy cheesecake pudding and topped with fresh homemade whipped cream, it is a festive and nostalgic dessert perfect for any backyard gathering.

Ingredients

  • 1 box white cake mix (plus eggs, oil, and water as required by box)
  • 1 package (3.4 oz) instant cheesecake pudding mix
  • 2 cups milk
  • 2 cups heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Red and blue food coloring
  • Patriotic sprinkles

Instructions

  1. Preheat your oven as directed on the cake mix box and grease a 9×13-inch baking pan.
  2. Prepare the white cake batter according to the package directions until smooth.
  3. Divide the batter equally into three separate bowls; tint one bowl red and one bowl blue, leaving the third bowl white.
  4. Drop spoonfuls of the different colored batters into the prepared pan, alternating colors to cover the bottom.
  5. Use a toothpick to gently swirl the colors together for a marbled effect without over-mixing.
  6. Bake according to the cake mix instructions, then remove from the oven and let rest for 10 minutes.
  7. Poke holes across the surface of the warm cake using the handle of a wooden spoon, then let the cake cool completely.
  8. Whisk the instant pudding and milk together until dissolved, then pour it over the cooled cake so it fills the holes.
  9. Refrigerate the cake until the pudding is set and the cake is thoroughly chilled.
  10. Whip the cold heavy cream, vanilla, and powdered sugar until stiff peaks form, then spread evenly over the cake.
  11. Top with festive sprinkles and serve immediately or keep refrigerated.

Notes

For the most stable whipped topping, ensure your heavy cream, mixing bowl, and beaters are all very cold before you begin whisking. If you need to transport the cake to a picnic, consider using a stabilized whipped cream or keeping the cake in an insulated carrier to maintain its fluffy texture.
