Description

This luscious pumpkin spice cake features a tender, velvety crumb infused with aromatic warm spices and topped with a rich, tangy cream cheese frosting. It is the perfect seasonal dessert that balances deep earthy flavors with a light, airy structure.

Ingredients

  • 1 cup pumpkin puree
  • 1 1/2 cups vegetable oil
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Prep oven and pan. Preheat your oven to 350°F (175°C) and lightly mist a 9×13-inch baking pan with non-stick spray.
  2. Mix wet ingredients. In a large bowl, whisk the eggs, sugar, vegetable oil, and pumpkin puree until the mixture is uniform and glossy.
  3. Whisk dry ingredients. In a separate bowl, stir together the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt until well combined.
  4. Combine the batter. Fold the wet mixture into the dry ingredients using a spatula until just incorporated, being careful not to over-mix.
  5. Bake the cake. Spread the batter evenly into the prepared pan and bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  6. Cool the cake. Allow the cake to cool completely on a wire rack for at least one hour before frosting to ensure the structure is set.
  7. Prepare the frosting. Beat the softened butter and cream cheese together until smooth, then incorporate vanilla and powdered sugar until fluffy.
  8. Frost the cake. Spread the cream cheese frosting evenly over the cooled cake and slice into desired portions.

Notes

  • Ensure the pumpkin puree is not pie filling to maintain the correct moisture and sweetness.
  • Use a kitchen scale to measure flour accurately to avoid a dense or heavy crumb structure.
  • Bring dairy ingredients to cool-room temperature to prevent lumps in the frosting.
  • Chill the cake for 30 minutes after frosting for cleaner, professional-looking slices.
