Description

Ingredients

  • 3 cups cake flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter, room temperature
  • 1 cup buttermilk, room temperature
  • 4 large eggs, room temperature
  • 2 large egg whites, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Red gel food coloring
  • Blue gel food coloring
  • Powdered sugar for dusting


Instructions

  1. Preheat your oven to 350°F (175°C) and meticulously grease and flour a 12-cup Bundt pan.
  2. In a stand mixer fitted with the paddle attachment, cream the butter and granulated sugar on medium speed until pale and fluffy.
  3. Add the eggs and egg whites one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Sift together the cake flour, baking powder, and salt in a separate bowl.
  5. With the mixer on low, add the dry ingredients in three parts, alternating with the buttermilk, and mix until just combined.
  6. Transfer 1.5 cups of batter into two separate bowls; tint one bowl with red food coloring and the other with blue.
  7. Using a quarter-cup measure, drop alternating scoops of plain, red, and blue batter into the pan until all batter is used.
  8. Tap the pan on the counter to release air bubbles and bake for 50 to 70 minutes until a skewer comes out clean.
  9. Cool in the pan for 15 minutes, then invert onto a wire rack to cool completely before dusting with powdered sugar.

To ensure a perfectly smooth emulsion, verify that your buttermilk and eggs have reached true room temperature before mixing. When layering the colors, avoid using a knife to swirl the batter, as the scoop method creates the most distinct and vibrant ribbons of color during the baking process.
