Description

This impressive Shrek Cake combines a decadent flourless almond chocolate torte with a custom-made green marzipan exterior. It is the perfect blend of high-end pastry techniques and playful character design, making it a standout centerpiece for any adventurous baker.


Ingredients

  • Ground almonds (Poudre d’amande)
  • High-quality dark chocolate (at least 60% cacao)
  • Softened butter or vegan margarine
  • Granulated sugar
  • 4 large eggs, separated
  • Flax seeds (Graines de lin)
  • Bitter almond essence
  • Powdered sugar
  • Blue and yellow food coloring


Instructions

  1. Melt the dark chocolate in a bain-marie or microwave until glossy and smooth, then set aside to cool.
  2. In a separate bowl, cream together softened butter and sugar until the mixture is light and aerated.
  3. Whisk ground almonds, the cooled chocolate, and four egg yolks into the butter mixture until fully combined.
  4. Beat egg whites in a clean bowl until stiff peaks form, then gently fold them into the chocolate batter using a spatula.
  5. Pour the batter into a greased and floured mold and bake at 180°C (350°F) for 25 minutes; cool completely on a wire rack.
  6. Pulse almond flour and powdered sugar in a blender, then mix with one egg white and bitter almond essence to create a marzipan ball.
  7. Tint the majority of the marzipan green using blue and yellow food coloring, reserving a small white piece for the eyes.
  8. Trim the cooled cake into an ogre face shape, saving the scraps for the ears and eyebrows.
  9. Roll out the green marzipan between parchment paper and drape it over the cake, smoothing the surface with your hands.
  10. Shape the cake scraps into trumpet ears and cover them with marzipan, attaching them to the head with a dab of water.
  11. Add the finishing touches by placing the eyes, flax seed eyelashes, and dusting cocoa powder for the pupils.

Notes

For the best results when sculpting, ensure the cake is completely chilled to minimize crumbling while trimming the face shape. If the marzipan becomes too warm and oily from your hands, a light dusting of powdered sugar on your workspace will help keep it manageable.
