Description

This refreshing Watermelon Pizza Cake is a clever, no-bake dessert that uses a crisp slab of melon as the foundation for tangy yogurt and pillowy whipped cream. It is the perfect cool-down treat for hot summer days, topped with a vibrant mosaic of fresh seasonal fruit.

Ingredients

  • 1 thick round slice of fresh watermelon (1.5 inches thick)
  • 1 can full-fat coconut milk, chilled overnight
  • 1/2 cup vanilla Greek yogurt
  • 1/2 cup heavy whipping cream
  • 2 tablespoons raw honey
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh blueberries
  • 1/2 cup sliced fresh peaches

Instructions

  1. Prep the base. Slice a uniform 1.5-inch thick round from the center of the watermelon and pat both sides thoroughly with paper towels to remove excess moisture.
  2. Chill the equipment. Place your mixing bowl and beaters in the freezer for ten minutes to ensure the cream stays cold and stable while whipping.
  3. Skim the cream. Open the chilled coconut milk can upside down, discard the liquid, and spoon only the solid white coconut cream into your chilled bowl.
  4. Whip to peaks. Beat the coconut cream or heavy cream on medium-high speed until it reaches soft, pillowy peaks, being careful not to over-whip.
  5. Blend the yogurt. Whisk the Greek yogurt with one tablespoon of honey in a small bowl until smooth, then spread over the watermelon base, leaving a half-inch border.
  6. Apply the cream. Gently spread the whipped cream over the yogurt layer using an offset spatula, creating decorative swirls while keeping it slightly thinner at the edges.
  7. Arrange the fruit. Scatter the blackberries, blueberries, and peach slices over the cream in a concentric pattern, pressing them down slightly so they are secure.
  8. Glaze and serve. Drizzle the remaining honey over the assembled fruit and slice into twelve wedges using a long, sharp, non-serrated knife for clean presentation.

Notes

  • Ensure the watermelon is fully dried with paper towels to prevent the cream from sliding off the surface.
  • For the best results, use a chilled serving platter to keep the cake stable and cool while serving.
  • If the whipped cream loses its texture, you can fold in a small amount of liquid coconut milk to smooth it back out.
  • Wipe your knife clean with a damp towel between every slice to maintain a professional look and prevent smearing.
