Description

This refined Apple Cider Cake features a tender, spiced crumb infused with concentrated orchard cider and finished with a crisp cinnamon-sugar coating. It is a perfect seasonal treat that balances delicate structure with deep, natural apple flavor.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups dark brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain whole milk Greek yogurt
  • 1/2 cup apple cider concentrate
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • 1/4 cup melted butter (for topping)
  • 1/2 cup granulated sugar mixed with 1 tablespoon cinnamon (for coating)

Instructions

  1. Prepare the pan. Brush a 10-cup Bundt pan thoroughly with softened butter and coat evenly with a thin layer of granulated sugar.
  2. Combine dry ingredients. Whisk together the flour, baking powder, baking soda, salt, and spices in a medium bowl until uniformly distributed.
  3. Cream butter and sugar. Beat the butter with brown and white sugars in a stand mixer for three minutes until pale and aerated.
  4. Emulsify the batter. Add eggs one by one and the vanilla, mixing until the batter is smooth and cohesive.
  5. Alternate wet and dry. Mix in the dry ingredients and combined liquids in three additions, starting and ending with the flour mixture.
  6. Bake the cake. Pour into the prepared pan and bake at 350°F for 35 to 42 minutes, or until a skewer comes out clean.
  7. Cool the cake. Let the cake rest in the pan on a wire rack for exactly ten minutes before inverting to unmold.
  8. Apply sugar coating. Brush the warm cake with melted butter and the cider reduction, then immediately dust with the cinnamon-sugar mixture.

Notes

  • Ensure all dairy and egg components are at room temperature to prevent the batter emulsion from breaking.
  • Avoid opening the oven door before the thirty-minute mark to ensure the cake sets properly without sinking.
  • Use a digital kitchen scale for the flour to prevent the cake from becoming dry or overly dense.
  • Brush the Bundt pan with meticulous care to ensure every fluted crevice is coated for a perfect release.
