Description

Ingredients

  • Fresh mango slices
  • Unsalted butter
  • All-purpose flour
  • Powdered sugar
  • Granulated sugar
  • Whole milk
  • Eggs
  • Baking powder
  • Salt
  • Vanilla essence


Instructions

  1. Caramelize the sugar. Heat granulated sugar and water in a heavy saucepan until it reaches a deep amber color, then pour into a square baking pan.
  2. Arrange the fruit. Place fresh mango slices closely together over the warm caramel layer.
  3. Cream butter and sugar. Beat room-temperature butter and sifted powdered sugar in a large bowl until light and fluffy.
  4. Add the eggs. Incorporate eggs one at a time, beating thoroughly after each addition until smooth.
  5. Sift dry ingredients. Combine flour, baking powder, and a pinch of salt by sifting them into the wet mixture.
  6. Mix the batter. Add milk and vanilla, then gently fold the dry ingredients into the wet until just combined.
  7. Fill the pan. Spread the batter evenly over the mango slices, smoothing the top and tapping to release air bubbles.
  8. Bake the cake. Bake at 180 C (350 F) for 35 to 40 minutes until golden and a toothpick comes out clean.
  9. Flip and serve. Rest for 10 minutes, loosen edges, and invert onto a platter to reveal the caramel-coated mangoes.
